Gluten-Free Millet Is Not Just for the Birds


You might be vaguely familiar with whole grain millet. It's easily confused with the great French realist painter, Jean Francois Millet, who had many grain themes in his masterpieces, including "The Gleaners," which you may remember from eighth grade art history class. This millet, however, is a small grain-like seed that is often the main ingredient in bird feed but, as you might expect, is not just for the birds.
Millet is an ancient grain originating in Northern Africa, some say, while others claim China. In any event, it is believed that millet was introduced into the United States in the late 1800's and was competitive with corn as a grain source for humans until it fell out of favor and was relegated to use primarily as livestock and bird feed.
Because it is gluten free, easily digested and rich in nutrients, millet is making a slow comeback in the American diet.
Gluten is a protein found in wheat which many people cannot digest, particularly those diagnosed with celiac disease. Symptoms of gluten intolerance may include diarrhea, flatulence, bloating and fatigue. Millet is a good alternative source of whole grains both for those with gluten intolerance and those wanting to increase fiber in their diet.
In addition to insoluble fiber, millet is a rich source of B vitamins, folate, magnesium and potassium, among other nutrients. Because it is so small, millet cooks fairly quickly compared to some other whole grains.
It can be prepared in many different ways including simply boiled like brown rice or cooked like a rice pilaf. It can also be served as a sweet, creamy morning porridge by simmering leftover millet with milk, diced apple or pear, and honey or maple syrup.
Try this quick and easy recipe for a millet pilaf.
Millet Pilaf Recipe
Place one cup of millet into a pan and toast over low heat until slightly brown. Don't overdo it.
Remove from the pan and sauté 3 cups of chopped vegetables (your choice of any colorful combination of onions, celery, carrots, bell peppers, etc.) in 2 tablespoons of extra virgin olive oil for several minutes. Add salt and pepper to taste.
Add back the millet and 2 cups of vegetable stock. Cover and let simmer for 20 to 30 minutes until the liquid is absorbed.
Fluff the millet with a fork. Serve and enjoy.
If you have leftovers, make a delicious salad using any rice, pasta or quinoa salad recipe.

Shin Splints: Causes and Treatments


The tibia, also called the shinbone or shankbone, and fibula are the two bones located in the lower leg. The tibia, named after the Greek aulos flute with the same name, is the larger of the two bones. It is prone to an injury commonly known as shin splints, or medial tibial stress syndrome. Shin splints are a painful injury most common in runners and athletes involved in aggressive, high-impact sports such as soccer, and they are considered an "overuse injury."
Sudden increase in the intensity of a workout or its duration can increase the risk of injury. The tendons and muscles located in the lower leg act as a shock absorber preventing much of the shock of an impact from reaching the knee and upper leg. Exerting too much pressure or extreme impact on the muscles causes inflammation. This can cause pronation of the feet, an excessive inward rolling of the foot onto the arch, leading to further injurie
s. Diagnosis of the injury involves a thorough exam by a qualified physician. However, if diagnosis is difficult to confirm, radiology tests may be needed, including x-rays and MRI scans.
The intensity of the pain can range from a dull ache to a sharp, shooting pain and is felt on the inner portion of the tibia. The affected area usually measures about four to six inches in length. The pain presents at the start of a workout and may decrease as the workout progresses, sometimes virtually disappearing. The pain usually returns at the end of a workout session, however.
Shin splints are common in those with flat feet, a condition in which the arch of the foot is all but nonexistent causing the ankle to roll inward. This causes misalignment of the leg and impedes the ability of the connective tissue to absorb shock. People with weak ankle muscles or a taut Achilles tendon are also more likely to suffer shin splints.
Treatment depends on the severity of the injury, but involves icing the leg to discourage inflammation. Non-steroidal anti-inflammatories (NSAIDs) such as ibuprofen and naproxen sodium may also be helpful. Support socks, sometimes called compression stockings, can prevent further inflammation and support the muscles. Those suffering from flat feet may benefit from orthotic inserts that increase the arch of the foot. Physical activities are limited or discontinued completely to allow the injury to heal. Once healed, the person should ease back into their exercise regimen, gradually increasing intensity. Exercises that strengthen the muscles of the lower leg are beneficial in preventing shin splints.

Treating Edema With Compression


Edema can affect any area of the body, but usually if affects legs, ankles, feet, arms and hands. The swelling is caused when tiny blood vessels leak fluid that is trapped in the surrounding tissue.

Occasional mild forms of edema can be controlled by ingesting less salt and by wearing compression garments, but may go away without treatment. Difficult as it may be to be diagnosed, there are a few common signs and symptoms to detect this disorder in people, note that if a person if found to exhibit these signs, medical attention should be given to the person:
  • Daytime sleepiness regardless of hours asleep
  • Loud, chronic snoring
  • Long pauses in breathing
  • Gasping, snorting, or choking during sleep
  • Restless or fitful sleep

How to Use an Oximeter


A pulse Oximeter provides a simple, effective and cheap way in which to measure a patient's oxygenation in a non-invasive manner. The device monitors the amount of haemoglobin that is saturated with oxygen. Haemoglobin is the name given to the iron-containing protein that absorbs oxygen in the blood. Haemoglobin is contained within red blood cells.
The Principles of Pulse Oximetry
A light source originates from the Oximeter probe at two different wavelengths (650 nm and 805 nm). The light is partially absorbed by the haemoglobin in a patient's blood. The amount of light absorbed depends on the degree to which the haemoglobin is oxygenated. By determining the amount of absorption, the processor can work out the amount of haemoglobin which is oxygenated.
Oxygenation levels should remain above 95% at all times. However, in individuals with chronic respiratory diseases or heart diseases, oxygenation levels may be lower.
The Uses of Pulse Oximetry
Pulse oximetry has an array of applications. Individual pulse oximetry measurements can be used in clinical situations in which hypoxemia (insufficient oxygenation of the blood) may be suspected. Continuous oximetry recordings can be used when a patient is under the influence of anaesthesia or sedation and to assess whether hypoxemia is occurring during sleep studies to help to diagnose the condition of obstructive sleep apnoea. Pulse oximetry can be used as an alternative to blood gas analysis in a range of clinical situations as it is easier and cheaper to perform.

The Limitations of Oximeter
Pulse Oximeter are unable to differentiate between the different forms of haemoglobin.
Environmental factors can interfere with the results of Oximeter, including excessive movement and strong ambient lighting. Cold hands can also affect the results. Should a patient with cold hands require their oxygenation levels to be measured, it is necessary for an individual to warm the extremity before taking a measurement. Nail varnish should be removed from the fingernails before an Oximeter is used as nail varnish can create false readings. Intravascular dyes may also temporarily interfere with the readings obtained through an Oximeter.
Improving an Oximeter's Signal
To improve an oximeter's signal, an individual can warm up a patient's skin through rubbing the skin. If necessary, a topical vasodilator cream can be applied to the fingers of the patient.
If an Oximeter fails to provide a valid result, an alternative probe site, a different probe or a different machine may need to be used.

Summer Food Poisoning Cures


Food poisoning is a common illness. According to the Center for Disease Control (CDC), 1 in 6 people in the US get sick from bad food or drink. Causes:

Salmonella is the most common type of food poisoning. It is seldom fatal; however, it is contagious, easily leading to multiple cases (outbreak).
Typical symptoms of food poisoning are:
  • Nausea
  • Vomiting
  • Abdominal pain and cramping
  • Diarrhea quickly developing within 48 hours of eating or drinking the contaminated food or drink.
If food poisoning is not treated early, further complications can become very serious and life-threatening:
  • Fever
  • Chills
  • Bloody Stools
  • Dehydration
  • Nervous system damage
You should seek immediate medical help if any of the following situations occur:
  • If you have nausea, vomiting, or diarrhea for longer than 2 days
  • If the ill person is a child under the age of three
  • If the ill person is pregnant or nursing
  • If abdominal symptoms are accompanied by a low-grade fever
  • If the symptoms appear after foreign travel
  • If other family members or friends who ate the same thing as you are also sick

  • If a fever is greater than 101 degrees and includes abdominal symptoms
  • Sharp or cramping pain lasting longer than 10 - 15 minutes
  • If the stomach or abdomen is swollen
  • If the eyes or skin appear yellow (jaundice)
  • Bloody stool or vomiting blood
  • Decreased or no urination, or dark-colored urine
  • Problems breathing, swallowing, or speaking
  • Joints swell or a skin rash appears
Often, minor food poisoning will pass within a few days, and there may be relief from many of the symptoms by doing some of the following:
  • Clear liquid only diet. Avoid food for a few days, and also avoid sugary liquids, as they will make diarrhea worse. Some of the children's electrolyte-replacement fluids, such as Pedialyte, are good for this. Most of the sport drinks are too sugary.

  • Antibiotics, in some cases, will make it worse; sometimes complicating the illness.

  • With toxic agent poisoning, often medical treatment is required: IV fluids, emergency intervention for life-threatening situations (such as stomach pumping), and antidotes, like activated charcoal

  • Stop eating all solid foods. Drink plenty of purified water.

  • Take one or more of the following:

  • Natural Cellular Deference (NCD)- Zeolites: this is a diuretic/detoxification liquid. Put 3-5 drops in juice.

  • Drink plenty of these very acidic juices:
Apple cider vinegar - 2 tablespoons on an empty stomach
Lemon juice- drink the juice from 4 lemons straight
Camu camu- ½ Tablespoon in ½ cup of purified water.
You must rinse your teeth with baking soda immediately after drinking any of these juices, as they will damage tooth enamel.
3. Grapefruit seed extract- a few drops in one of the above juices
4. Garlic- cut up 1 clove and swallow with lots of water
5. Coloidal silver- This is a natural antibiotic. Take as directed.
6. Goldenseal Root- 1-2 capsules and 3 more an hour later. Drink lots of water. This is also a diuretic.
7. Charcoal- If you don't have any around, toast some bread dark, and eat dry slowly with a lot of water.
In general, food poisoning cure-alls involve plenty of hydration and electrolyte replenishment, rest, and a clear liquid diet for a few days. When beginning to eat food again, go slowly at first, and with mild, bland foods.
